Easy Crockpot Buffalo Chicken Dip with Ranch

This creamy, tangy, and spicy buffalo chicken dip is made effortlessly in a slow cooker with just 5 minutes of prep. Perfect for game days, potlucks, or any gathering, it’s a crowd-pleasing appetizer that stays warm for hours.

  • 2 cans (12.5 oz each) chunk chicken breast, drained
  • 16 oz cream cheese, softened to room temperature
  • 1 oz packet ranch dressing mix
  • ¾ cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 ½ cups shredded cheddar cheese, divided
  • ½ cup shredded mozzarella cheese
  • 34 green onions, sliced (for garnish)

Instructions

  1. In a medium mixing bowl, beat the softened cream cheese and ranch dressing mix together with a hand mixer or whisk until smooth and fluffy.
  2. Drain the canned chicken well, then shred into bite-sized pieces using forks or your hands.
  3. Lightly spray the inside of a 3-4 quart slow cooker with non-stick spray. Layer in the shredded chicken, dollop the cream cheese mixture over the top, pour the buffalo sauce over everything, and add 1 cup of cheddar cheese and the mozzarella cheese. Do not stir.
  4. Cover and cook on LOW for 1.5 to 2 hours. After 1 hour, stir well until all ingredients are combined and smooth. Continue cooking for another 30 minutes to 1 hour.
  5. Sprinkle the remaining ½ cup of cheddar cheese over the top. Cover and cook for another 10-15 minutes until the cheese is melted and bubbly.
  6. Turn the slow cooker to WARM. Garnish with sliced green onions and serve immediately with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

If the dip is too thick, stir in a splash of milk (about 2 tablespoons). If too thin, cook with the lid off for 15 minutes. For a spicier dip, add 1-2 teaspoons cayenne pepper or extra hot sauce. For a milder version, use only ½ cup buffalo sauce. This dip can be made ahead and refrigerated overnight; cook on LOW for 2-3 hours the next day. Leftovers keep in the refrigerator for up to 4 days.
