  • 1 can (4 oz) diced green chiles
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp chili powder
  • ½ tsp black pepper
  • 4 oz cream cheese, softened
  • ½ cup sour cream (optional)
  • 1 tbsp olive oil
  • A handful fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges (for serving)

Instructions

  1. Shred cooked rotisserie chicken into bite-sized pieces and set aside.
  2. Heat olive oil over medium heat in a large pot. Add diced onion and cook until translucent, about 5-7 minutes, stirring frequently.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in cumin, oregano, chili powder, and black pepper. Toast spices with onions and garlic for 30 seconds.
  5. Add diced green chiles and stir well.
  6. Pour in chicken broth and drained white beans. Stir to combine and bring to a gentle simmer over medium-high heat, about 4-5 minutes.
  7. Add softened cream cheese in chunks, stirring constantly until fully melted and creamy, about 3-4 minutes. Stir in sour cream if using.
  8. Add shredded chicken and stir to coat. Simmer gently for 5 minutes to meld flavors.
  9. Taste and adjust seasoning with salt if needed. Add more broth or water if chili is too thick.
  10. Serve hot, garnished with chopped cilantro and a squeeze of fresh lime juice.
