  • 1/2 cup (120 ml) water
  • 1/4 cup (60 ml) strawberry or berry juice concentrate (or 1/2 cup/120 ml regular juice)
  • 1/4 cup (60 ml) unsweetened coconut milk (carton variety)
  • 1 teaspoon agave syrup or honey (optional, to taste)
  • Ice cubes (enough to fill a tall glass)
  • Freeze-dried strawberries (optional, for garnish)

Instructions

  1. Brew the white tea: Bring 1/2 cup (120 ml) of water to a boil. Let it sit for 30 seconds, then pour over 2 white tea bags in a heatproof glass or measuring cup. Steep for 5-7 minutes. Remove tea bags and let cool to room temperature (or refrigerate until cold).
  2. Prepare the juice concentrate: If using frozen concentrate, thaw it in the fridge overnight or under warm water. Measure 1/4 cup (60 ml) concentrate (or 1/2 cup/120 ml regular juice).
  3. Fill a tall glass (16 oz or larger) to the top with ice cubes.
  4. Pour the cooled white tea over the ice, then add the berry juice concentrate. Stir gently to combine.
  5. Slowly pour in the coconut milk. Do not stir immediately; let it create creamy ribbons. After a few seconds, give one or two gentle stirs for a marbled effect.
  6. Taste and adjust sweetness: add agave or honey if desired, or more coconut milk for extra creaminess.
  7. Garnish with freeze-dried strawberries if using. Serve immediately with a straw.

Notes

For best results, chill all ingredients before assembling. Use carton coconut milk, not canned, to avoid separation. Brew tea the night before for a colder drink. For a party, multiply ingredients and mix tea and juice in a pitcher; add coconut milk per glass when serving.
