  • 1 can (16.3 oz) refrigerated biscuit dough (e.g., Pillsbury Grands!)
  • 1 cup shredded sharp cheddar cheese (freshly shredded from a block)
  • 1/4 cup baking soda
  • 2 cups warm water
  • 3 tablespoons unsalted butter, melted
  • 1 packet (1 oz) dry ranch seasoning mix (e.g., Hidden Valley)
  • Flaky sea salt, for sprinkling (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Make the baking soda bath: In a large pot, bring 2 cups of water to a boil. Carefully stir in the 1/4 cup of baking soda. It will fizz. Reduce heat to a simmer.
  3. Prepare the dough: Open the can of biscuit dough and separate the biscuits. Cut each biscuit into 4 equal pieces (about 32 pieces total).
  4. Add the cheese: Take each piece of dough and press a small pinch of shredded cheddar into the center. Pinch the edges closed to seal the cheese inside. Roll gently into a ball shape.
  5. Boil the bites: Working in batches of 5-6, drop the dough balls into the simmering baking soda water. Boil for exactly 30 seconds, flipping halfway through with a slotted spoon. Remove with the slotted spoon and place on the parchment-lined baking sheet, spacing about 2 inches apart.
  6. Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, until golden brown and puffed up.
  7. Finish with butter and ranch: While the bites are baking, melt the 3 tablespoons of butter in a small bowl. Stir in the dry ranch seasoning mix. As soon as the pretzel bites come out of the oven, brush them generously with the butter-ranch mixture. Sprinkle with flaky sea salt if desired.
  8. Cool slightly: Let them rest on the baking sheet for 5 minutes before serving. The cheese will be molten inside.

Notes

Don’t skip the baking soda bath—it gives the pretzel bites their signature chewy texture. Seal the cheese completely to prevent leakage. For extra crispiness, flip the bites halfway through baking. These are best served warm but are still great at room temperature for lunchboxes.
