A quick and fun breakfast recipe that turns bagels into mini breakfast pizzas with customizable toppings, perfect for busy family mornings.

Ingredients

  • Bagels (plain or everything), sliced in half horizontally
  • Shredded cheese (mozzarella or sharp cheddar blend)
  • Large eggs, cooked scrambled or fried
  • Cooked breakfast meat (bacon, sausage crumbles, or ham slices) or plant-based sausage for vegetarian option
  • Tomato sauce (marinara or pizza sauce)
  • Vegetables (diced bell peppers, sliced mushrooms, spinach) – optional
  • Seasonings (dried oregano, red pepper flakes, black pepper)
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your toppings: cook breakfast meat thoroughly, scramble or fry eggs, and dice any veggies you want to add.
  3. Slice the bagels in half and lightly brush the cut sides with olive oil. Place them cut side up on a baking sheet.
  4. Spread a thin layer of tomato sauce over each bagel half.
  5. Layer on cheese, followed by cooked meat, eggs, and veggies. Sprinkle oregano, black pepper, and red pepper flakes if desired.
  6. Bake in the oven for 8-10 minutes until cheese is bubbly and bagel edges are golden.
  7. Remove from oven and let cool for a minute before serving.
