These air fryer pumpkin seeds with cinnamon sugar are a quick and easy snack that’s perfect for fall. They’re crunchy, sweet, and ready in under 15 minutes.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Clean your pumpkin seeds: Separate seeds from stringy pulp, rinse in a colander under cold water, and pick out any big chunks.
  2. Dry the seeds thoroughly: Spread rinsed seeds on a clean kitchen towel or paper towels and pat dry. Let sit for about 5 minutes while preheating the air fryer.
  3. Preheat air fryer to 350°F (175°C).
  4. Make the cinnamon sugar coating: In a medium bowl, whisk together granulated sugar, brown sugar, cinnamon, and salt. Pour melted butter over dry seeds, then sprinkle cinnamon sugar mixture on top. Toss until every seed is coated.
  5. Air fry the seeds: Spread coated seeds in a single layer in the air fryer basket. Cook at 350°F for 5 minutes, then shake or stir. Cook for another 3-5 minutes until golden brown and fragrant.
  6. Cool completely: Transfer seeds to a plate or baking sheet and let cool for at least 10 minutes before serving.

Notes

Don’t skip drying the seeds thoroughly to ensure crispiness. Watch the sugar to prevent burning; check seeds at the 6-minute mark. Let cool completely for maximum crunch. Store in an airtight container at room temperature for up to 5 days.
