Ingredients

Scale
  • 1 lb (450g) chicken breast, cut into bite-sized pieces
  • 1/2 cup (60g) sun-dried tomatoes (oil-packed), drained and chopped
  • 1 cup (240ml) heavy cream
  • 4 cups (960ml) low-sodium chicken broth
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup (50g) freshly grated Parmesan cheese
  • 2 cups (60g) fresh spinach
  • 2 tablespoons olive oil (or reserved sun-dried tomato oil)
  • Salt and black pepper to taste

Instructions

  1. Prep the Ingredients (5 minutes): Cut chicken into 1-inch cubes. Dice onion, mince garlic, chop sun-dried tomatoes, and grate Parmesan.
  2. Sauté the Aromatics (3 minutes): Heat 2 tablespoons olive oil in a large pot over medium heat. Add onion and cook 2 minutes until translucent. Add garlic and cook 30 seconds.
  3. Cook the Chicken (4 minutes): Add chicken pieces in a single layer. Season with 1/2 tsp salt, 1/4 tsp black pepper, oregano, and red pepper flakes. Cook 3-4 minutes until golden and cooked through.
  4. Add the Sun-Dried Tomatoes (1 minute): Stir in chopped sun-dried tomatoes and cook 1 minute.
  5. Pour in the Broth (10 minutes): Add chicken broth, scraping up browned bits. Bring to a gentle boil, then simmer 8-10 minutes.
  6. Add the Cream and Parmesan (2 minutes): Reduce heat to low. Slowly pour in heavy cream while stirring. Add Parmesan and stir until melted and smooth.
  7. Wilt the Spinach (1 minute): Add spinach and stir until wilted, about 30-60 seconds.
  8. Taste and Adjust (1 minute): Adjust seasoning with salt and pepper if needed.
  9. Serve Immediately: Ladle into bowls and garnish with extra Parmesan, fresh parsley, or olive oil.

Notes

For a dairy-free version, use full-fat coconut milk instead of heavy cream. For a gluten-free option, this soup is naturally gluten-free—just check your chicken broth label. If the soup thickens too much after sitting, add a splash of chicken broth or water when reheating.
