Instructions

  1. Prepare the Red Strawberry Layer: Combine sliced strawberries with fresh lemon juice and sweetener. Let sit 5-10 minutes to macerate. Optionally pulse in a blender for smoother texture.
  2. Drain the Cottage Cheese: Place cottage cheese in a fine-mesh strainer or cheesecloth over a bowl. Drain for at least 5 minutes to remove excess liquid.
  3. Make the White Layer: Mix drained cottage cheese with Greek yogurt and vanilla extract. Blend until smooth and creamy. Adjust sweetness if needed.
  4. Prepare the Blueberry Layer: In a small saucepan, combine blueberries, chia seeds, and sweetener over low heat. Stir occasionally until berries soften and mixture thickens (5-7 minutes). Let cool completely.
