  • 12 baby potatoes, halved
  • 3 large carrots, sliced into sticks
  • 8 ounces green beans, trimmed

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels and place them in a large mixing bowl.
  3. In a small bowl, combine 3 tablespoons olive oil, lemon juice and zest, minced garlic, rosemary, thyme, salt, and pepper. Stir well.
  4. Pour the lemon herb mixture over the chicken thighs and toss to coat evenly. Marinate for 10-15 minutes at room temperature if time allows.
  5. Meanwhile, prepare the vegetables: halve the baby potatoes, slice the carrots into sticks, and trim the green beans. Toss them in a separate bowl with 1 tablespoon olive oil, salt, and pepper.
  6. Line a rimmed sheet pan with parchment paper or a silicone baking mat.
  7. Arrange the chicken thighs skin-side up on one side of the sheet pan, spacing them out to avoid crowding.
  8. Spread the seasoned vegetables evenly on the other side of the sheet pan.
  9. Roast in the preheated oven for 35-40 minutes, turning the chicken and vegetables halfway through cooking.
  10. Optional: For extra crispness, broil for 2-3 minutes at the end, watching carefully to avoid burning.
  11. Remove from the oven and garnish with fresh parsley and an extra squeeze of lemon juice before serving.
