  • 1 teaspoon yellow mustard
  • Salt and freshly ground black pepper, to taste
  • 2 medium fresh jalapeños, thinly sliced (seeds in for more heat, seeds out for milder)
  • Optional toppings:
  • ½ cup (about 4 oz / 120 g) black beans, rinsed and drained
  • ¼ cup sliced green onions
  • ½ cup diced tomatoes or pico de gallo
  • Fresh cilantro for garnish
  • Sour cream or Greek yogurt for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium saucepan, melt the cream cheese over medium heat.
  3. Whisk in the shredded sharp cheddar cheese until smooth.
  4. Slowly add the beer while whisking constantly; the sauce will thicken as it heats.
  5. Stir in garlic powder, smoked paprika, yellow mustard, salt, and pepper. Simmer gently for 5 minutes, whisking frequently to avoid curdling.
  6. Arrange the tortilla chips in an even layer on a large rimmed sheet pan.
  7. Sprinkle the shredded cheese blend evenly over the chips.
  8. Drizzle the warm beer cheese sauce evenly over the chips and cheese.
