  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs or 700g)
  • Β½ cup finely grated Parmesan cheese (about 50g)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Β½ teaspoon dried oregano
  • 3 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • ΒΌ cup all-purpose flour (about 30g)
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper. (5 minutes)
  2. In a shallow bowl, combine grated Parmesan, dried thyme, parsley, and oregano. Mix well. (2 minutes)
  3. Lightly dredge each thigh in flour, shaking off excess, then press the skin side firmly into the Parmesan herb mixture so it sticks. Set aside. (5 minutes)
  4. Warm olive oil over medium-high heat in your skillet until shimmering but not smoking. (2 minutes)
  5. Place thighs skin-side down and press gently with tongs for even contact. Cook for 7-9 minutes without moving until the crust is golden brown and crisp. (7-9 minutes)
  6. Turn the chicken over and reduce heat to medium. Cook another 8-10 minutes until internal temperature reaches 165Β°F (74Β°C). Use a meat thermometer if you have one. (8-10 minutes)
  7. While chicken cooks, mix softened butter with minced garlic in a small bowl. (3 minutes)
  8. During the last 2 minutes of cooking, spoon garlic butter over the chicken repeatedly, letting it melt and soak into the crust. (2 minutes)
  9. Remove chicken from pan and let rest for 5 minutes before serving to lock in juices. (5 minutes)

Notes

Pat chicken dry thoroughly for best crispiness. Do not flip chicken too soon to allow crust to form. Add garlic butter near the end to avoid burnt garlic. Let chicken rest after cooking to keep it juicy. For gluten-free, substitute flour with almond flour or gluten-free blend. For dairy-free, use plant-based butter and nutritional yeast instead of Parmesan.
