  • 2 medium delicata squash
  • 1 cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • ¼ cup all-purpose flour
  • 3 tablespoons pure maple syrup
  • 2 tablespoons butter, melted
  • Optional: fresh thyme or rosemary, flaky sea salt for garnish

Instructions

  1. Preheat oven to 425°F (218°C). Line a baking sheet with parchment paper and place a wire rack on top if available.
  2. Wash delicata squash thoroughly. Cut off both ends, then slice into ½-inch thick rings. Scoop out seeds and stringy bits from the center of each ring.
  3. Set up breading station: In first bowl, mix flour with a pinch of salt and pepper. In second bowl, whisk eggs until smooth and slightly frothy. In third bowl, combine panko, Parmesan, garlic powder, smoked paprika, salt, and pepper.
  4. Pat squash rings dry with paper towels to remove excess moisture.
  5. Dip each ring first in flour (shake off excess), then in egg wash (let excess drip off), then press into panko mixture until fully coated. Place on wire rack.
  6. Bake for 15 minutes. Meanwhile, make maple glaze: In a small saucepan over low heat (or microwave for 20 seconds), melt butter and maple syrup together until smooth.
  7. After 15 minutes, remove baking sheet from oven. Brush each ring generously with maple butter glaze. Return to oven and bake for another 8-10 minutes until deep golden brown and edges are caramelized.
  8. As soon as they come out of the oven, brush rings with another layer of glaze. Sprinkle with fresh thyme or rosemary and flaky sea salt if desired. Let cool on rack for 5 minutes before serving.

Notes

Pat squash rings completely dry for maximum crispiness. Don’t overcrowd the baking sheet—leave at least an inch between rings. A wire rack helps achieve all-over crispiness. For gluten-free, use almond flour and gluten-free panko. For dairy-free, skip Parmesan and use vegan butter. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a 350°F oven for 5-7 minutes. Rings can be frozen for up to 2 months.
