  • 8 oz cream cheese, softened
  • 1 ½ cups sharp cheddar cheese, shredded (reserve ½ cup for topping)
  • 34 medium jalapeños, roasted and diced (remove seeds for milder heat)
  • 4 slices bacon, cooked and crumbled (optional)
  • ¼ cup mayonnaise
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup panko breadcrumbs
  • 2 tbsp butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the jalapeños on a hot skillet over medium-high heat until blackened and blistered all over, about 5-7 minutes. Let cool, then dice finely, removing seeds if desired.
  3. Cook the bacon in the same skillet until crispy. Drain on paper towels and crumble into small pieces.
  4. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar (reserve ½ cup for topping), mayonnaise, garlic powder, onion powder, salt, and pepper. Mix well until creamy and fully blended.
  5. Add the roasted jalapeños and crumbled bacon into the cheese mixture and stir gently to combine evenly.
  6. Transfer the mixture to your prepared baking dish, spreading it out evenly.
  7. In a small bowl, mix panko breadcrumbs with melted butter and the reserved ½ cup shredded cheddar.
  8. Sprinkle the breadcrumb-cheese mixture evenly over the dip.
  9. Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and bubbly around the edges.
  10. Remove from oven and let cool for 5 minutes before serving.

Notes

To keep the baking dish from sticking, lightly grease it with butter or non-stick spray. If the topping browns too quickly, loosely cover with foil halfway through baking. For a milder dip, remove jalapeño seeds or use fewer peppers. Bacon fat can be saved for other uses. Panko breadcrumbs can be substituted with crushed tortilla chips or gluten-free breadcrumbs. For dairy-free options, use plant-based cream cheese and cheddar alternatives.
