Instructions

  1. Preheat your oven to 450°F (232°C). Place a wire rack on a rimmed baking sheet and spray it lightly with cooking oil.
  2. Wash and dry the cauliflower head thoroughly. Cut it into bite-sized florets, about 1.5 to 2 inches each. Pat them dry with a clean kitchen towel.
  3. In a large bowl, whisk together 1 cup all-purpose flour, 1 cup water (or milk), 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth.
  4. In a separate shallow bowl, combine 1 cup panko breadcrumbs and 1/2 cup grated Parmesan cheese (if using). Mix well.
  5. Working in batches, dip each floret into the batter, letting any excess drip off. Then roll it in the panko mixture, pressing gently so the crumbs adhere. Place the coated florets on the prepared wire rack.
  6. Bake for 20-25 minutes, flipping the florets halfway through, until they’re golden brown and crispy.
  7. While the cauliflower bakes, melt 3 tablespoons unsalted butter in a small saucepan over low heat. Remove from heat and whisk in 1/2 cup Buffalo hot sauce, 1 tablespoon honey, 1/2 teaspoon garlic powder, and a pinch of cayenne. Stir until smooth and well combined.
  8. Once the cauliflower is baked, transfer it to a large bowl. Pour the Buffalo sauce over the top and gently toss with tongs until every piece is evenly coated.
  9. Serve immediately, garnished with chopped parsley or chives, with ranch or blue cheese dressing and celery sticks on the side.
