These crispy bacon-wrapped jalapeño poppers feature a creamy cheese filling that balances the heat of the jalapeños with smoky, crunchy bacon. Perfect as a quick and easy appetizer for gatherings or game days.

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese (about 100 g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder (optional)
  • 1/2 teaspoon smoked paprika
  • 12 slices thick-cut bacon
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment paper for easy cleanup.
  2. Wearing gloves, slice each jalapeño in half lengthwise and carefully remove the seeds and membranes with a spoon. Leave some membranes if you want more spice.
  3. In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix thoroughly until smooth and creamy. If too stiff, stir in a teaspoon of milk.
  4. Fill each jalapeño half generously with the cheese mixture using a small spoon or piping bag.
  5. Cut each bacon slice in half crosswise. Wrap each filled jalapeño half with a bacon piece, starting at the bottom and spiraling up. Secure with a toothpick if needed.
  6. Place poppers seam-side down on the baking sheet, spacing evenly to allow heat circulation.
  7. Bake for 20-25 minutes until bacon is crispy and cheese is bubbly. Rotate the pan halfway through baking if needed.
  8. Let poppers cool for 5 minutes before serving to allow the cheese to set slightly.

Notes

Wear gloves when handling jalapeños to avoid skin irritation. Use thick-cut bacon for best crispiness. Remove seeds to reduce heat or leave some membranes for more spice. Rotate baking pan halfway for even cooking. Let poppers rest before serving to prevent cheese from oozing. Can be prepared ahead and refrigerated before baking; add extra baking time if baking cold. For air fryer, cook at 360°F (180°C) for 12-15 minutes, flipping halfway.
