  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 3 cups fresh spinach
  • ¼ teaspoon red pepper flakes (optional)
  • Fresh basil or parsley for garnish

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and Italian seasoning. Let sit at room temperature for 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-6 minutes per side until golden brown and internal temperature reaches 165°F. Transfer to a plate and tent with foil.
  3. Reduce heat to medium. Add butter to the skillet. Sauté garlic and sun-dried tomatoes for 1 minute until fragrant.
  4. Pour in chicken broth and scrape up browned bits from the pan. Let simmer for 2 minutes. Reduce heat to medium-low and stir in heavy cream. Whisk until smooth and slightly thickened, about 2-3 minutes.
  5. Add spinach a handful at a time, stirring until wilted (about 2 minutes). Stir in Parmesan cheese until melted. Adjust consistency with more broth if needed.
  6. Return chicken to the skillet, spooning sauce over the top. Simmer on low for 3-4 minutes. Sprinkle with red pepper flakes if desired.
  7. Remove from heat. Garnish with fresh basil or parsley. Let rest 5 minutes before serving.

Notes

For best results, use freshly grated Parmesan and pat chicken dry before seasoning. Keep heat on medium-low when adding cream to prevent curdling. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
