A simple and delicious slow cooker Tuscan chicken recipe with a creamy sauce made from cream cheese, sun-dried tomatoes, and spinach. Perfect for busy weeknights or last-minute dinners.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil)
  • 3 cups fresh baby spinach
  • 4 oz cream cheese, softened
  • 1 tablespoon Italian seasoning
  • 3 garlic cloves, minced
  • Salt and pepper to taste
  • Optional: 1/4 cup grated Parmesan cheese
  • Optional: red pepper flakes

Instructions

  1. In a medium bowl, combine softened cream cheese, minced garlic, Italian seasoning, salt, and pepper. Stir until smooth and evenly mixed.
  2. Place chicken breasts in a single layer at the bottom of the slow cooker. Slice thick pieces horizontally if needed for even cooking.
  3. Scatter chopped sun-dried tomatoes over the chicken.
  4. Dollop the cream cheese mixture evenly over the chicken and tomatoes.
  5. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken reaches 165°F (74°C) and is tender.
  6. About 15 minutes before serving, stir in fresh baby spinach and let it wilt.
  7. If using, sprinkle grated Parmesan cheese on top and let it melt before serving.

Notes

Do not lift the slow cooker lid frequently to maintain heat. Soften cream cheese before mixing to avoid lumps. Use fresh garlic for best flavor. If sauce is too thick, add a splash of chicken broth or water. Thaw chicken before cooking for best results. Optional Parmesan cheese adds a nutty finish. Can substitute chicken thighs or dairy-free cream alternatives.
