  • 810 garlic scapes, trimmed and roughly chopped
  • 1 can (15 oz / 425 g) cannellini or great northern beans, drained and rinsed
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 garlic cloves, roasted alongside the scapes (optional)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh parsley or chives
  • 1 small baguette, sliced thinly for crostini
  • 1 tablespoon butter or olive oil for brushing crostini

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Trim and roughly chop the garlic scapes. Toss them with a drizzle of olive oil, salt, and the unpeeled garlic cloves on the baking sheet.
  3. Roast for 15-20 minutes until tender and slightly browned, turning halfway through.
  4. Once cooled slightly, squeeze the roasted garlic cloves out of their skins and add them to your food processor along with the roasted scapes.
  5. Add the drained white beans, lemon juice, olive oil, salt, and pepper to the food processor. Pulse until smooth and creamy, about 1-2 minutes, scraping down the sides as needed.
  6. Taste and adjust seasoning. If too thick, add a teaspoon of water or more olive oil. If more acidity is needed, add more lemon juice. Mix in the fresh herbs with a spatula.
  7. Slice the baguette into ¼ inch (6 mm) slices. Brush lightly with butter or olive oil on both sides.
  8. Toast the crostini in the oven at 375°F (190°C) for 8-10 minutes, flipping halfway, until golden and crisp.
  9. Serve the dip warm or at room temperature with crostini. Garnish with extra fresh herbs or a drizzle of olive oil if desired.

Notes

Roast garlic scapes slowly to mellow their flavor and bring out sweetness. Scrape down the food processor sides during blending for smooth texture. Toast crostini until crisp but not burnt. For extra creaminess, add Greek yogurt or plant-based milk. Leftovers keep well refrigerated for up to 3 days; stir in olive oil or water before serving again.
