  • 1 cup (245g) pumpkin puree (100% pure pumpkin, not pie filling)
  • 3 tablespoons (60ml) maple syrup (pure maple syrup preferred)
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • a pinch of salt
  • 4 sheets graham crackers (crushed, or substitute with granola, ginger snaps, etc.)
  • whipped cream (optional, for topping)
  • pumpkin seeds (optional, for garnish)

Instructions

  1. In a medium mixing bowl, combine 2 cups (480g) plain Greek yogurt, 1 cup (245g) pumpkin puree, 3 tablespoons (60ml) maple syrup, 1 teaspoon vanilla extract, 1 teaspoon pumpkin pie spice, ½ teaspoon cinnamon, and a pinch of salt. Whisk until completely smooth and uniform in color (about 1 minute).
  2. Place about 4 sheets of graham crackers in a zip-top bag and crush into coarse crumbs using a rolling pin or the bottom of a heavy glass (about 30 seconds).
  3. Layer the parfaits: In parfait glasses or small jars, start with a layer of pumpkin yogurt mixture (about 2 tablespoons), then a layer of crushed graham crackers (about 1 tablespoon). Repeat layers until you have about 3 layers of each, ending with pumpkin yogurt mixture on top.
  4. Chill in the refrigerator for at least 30 minutes (optional but recommended) to allow flavors to meld and graham crackers to soften slightly.
  5. Just before serving, top with a dollop of whipped cream and a sprinkle of pumpkin seeds or cinnamon if desired. Serve immediately.

Notes

For best flavor, chill assembled parfaits for at least 30 minutes or overnight. The pumpkin yogurt mixture can be made ahead and stored separately for up to 5 days. If the mixture is too thick, add a tablespoon of milk or water; if too thin, add more yogurt. Don’t skip the salt—it balances the sweetness. For a vegan version, use thick coconut or almond yogurt and coconut whipped cream. For gluten-free, use gluten-free granola or cookies. To keep graham crackers crunchy, store them separately and add just before serving.
