  • 1 cup (90g) rolled oats (old-fashioned oats)
  • 1 cup (240ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (64g) creamy peanut butter (natural, no added sugar preferred)
  • 1 large ripe banana, mashed (about 1/2 cup / 120g)
  • 12 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon (2.5ml) vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a small mixing bowl with a fork until mostly smooth.
  2. Add milk, peanut butter, maple syrup (or honey), and vanilla extract to the mashed banana. Stir until the peanut butter is fully incorporated and the mixture is smooth.
  3. Add rolled oats, chia seeds (if using), and a pinch of salt. Stir until well combined.
  4. Transfer the mixture to a mason jar or airtight container.
  5. Refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, extra peanut butter, chopped nuts, or cinnamon. Serve cold or microwave for 30-45 seconds if desired.

Notes

For best texture, use rolled oats (not quick or steel-cut). Mash the banana thoroughly for even flavor. Mix peanut butter completely into the milk to avoid streaks. Let the oats sit for at least 8 hours for optimal creaminess. The oats keep in the fridge for up to 5 days and taste even better on day 2 or 3. Do not freeze.
