  • 4 boneless, skinless chicken breasts (medium size)
  • 2 tablespoons unsalted butter
  • 34 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil)
  • 4 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil (plus 1 tablespoon more for cooking)
  • A handful of fresh basil, chopped (optional)

Instructions

  1. Pat 4 boneless, skinless chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and 1 teaspoon dried Italian seasoning. Let rest while you heat your pan (about 5 minutes).
  2. Place a large skillet over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter. When butter melts and starts to foam, carefully add the chicken breasts. Cook for 5-6 minutes per side, until golden brown and cooked through (internal temp should reach 165°F / 74°C). Remove chicken and set aside on a plate, tented with foil.
  3. Lower heat to medium. Add remaining tablespoon olive oil and butter. Toss in minced garlic (3-4 cloves) and sauté until fragrant, about 30 seconds. Watch closely so garlic doesn’t burn.
  4. Stir in 1/3 cup chopped sun-dried tomatoes. Let them warm and soften for 1-2 minutes.
  5. Pour in 1/2 cup chicken broth and 1 cup heavy cream. Stir well to combine. Let the mixture simmer gently, about 3-4 minutes, until it thickens slightly and coats the back of a spoon.
  6. Stir in 1/2 cup freshly grated Parmesan cheese until melted and smooth. Then add 4 cups fresh baby spinach, stirring until wilted, about 2 minutes.
  7. Nestle the cooked chicken breasts back into the creamy sauce. Spoon sauce over the top. Let everything simmer together for 2-3 minutes so flavors meld and chicken stays warm.
  8. Remove from heat. Sprinkle chopped fresh basil over the top for a burst of herbal brightness. Serve immediately, spooning extra sauce over the chicken.

Notes

If sauce is too thick, add more chicken broth or cream to loosen. If too thin, simmer longer. Avoid burning garlic by watching cooking time closely. Use room temperature chicken for even cooking. For dairy-free version, substitute heavy cream with full-fat coconut milk and Parmesan with nutritional yeast. Sun-dried tomatoes packed in oil provide better texture; rehydrate dry ones if needed.
