Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1 cup granulated sugar
  • 6 tablespoons salted butter, cut into pieces
  • 1/2 cup heavy cream, room temperature
  • 1 teaspoon vanilla extract
  • Pinch of sea salt (optional)
  • 1/2 cup chopped pecans or walnuts, toasted
  • 1/4 cup mini chocolate chips (optional)
  • Flaky sea salt for finishing
  • 4–5 medium apples, sliced (Granny Smith and Honeycrisp recommended)
  • Lemon juice for tossing with apple slices

Instructions

  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until completely smooth, about 2 minutes. Scrape down the sides, add powdered sugar and vanilla extract, and beat for another minute. With mixer on low, slowly drizzle in 1/4 cup heavy cream. Increase speed to high and whip for 2-3 minutes until light, fluffy, and doubled in volume. Spread into serving dish.
  2. Place granulated sugar in a heavy-bottomed saucepan over medium heat. Stir constantly as sugar melts, about 6-8 minutes, until deep amber. Remove from heat, carefully whisk in butter pieces until melted. Slowly pour in 1/2 cup heavy cream while whisking continuously. Stir in vanilla and sea salt. Let cool 5-10 minutes.
  3. Pour warm caramel sauce evenly over cream cheese layer. Let set at room temperature for 10 minutes, then sprinkle with nuts, chocolate chips, and flaky sea salt.
  4. Slice apples into wedges, toss with lemon juice to prevent browning. Arrange around dip on serving platter.

Notes

Cream cheese must be at room temperature to avoid lumps. Don’t walk away from caramel as it can burn quickly. Use room temperature cream for caramel to prevent seizing. Toast nuts for best flavor. Dip can be made up to 2 days ahead; store cream cheese layer and caramel separately. Best served at room temperature.
