  • ½ cup buffalo hot sauce (120ml) – Frank’s RedHot recommended
  • ½ cup blue cheese crumbles (75g) – Maytag or quality blue cheese
  • 1 cup shredded cheddar cheese (100g)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Optional garnish: chopped green onions or fresh parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If not using pre-cooked chicken, boil or roast about 2 chicken breasts until fully cooked (internal temp 165°F / 74°C). Let cool slightly, then shred finely with two forks (about 10-15 minutes).
  3. In a mixing bowl, combine softened cream cheese and sour cream. Beat together until smooth and creamy.
  4. Stir in buffalo hot sauce. Taste and adjust spiciness if desired.
  5. Add garlic powder, onion powder, salt, and pepper. Mix well.
  6. Fold in shredded chicken, shredded cheddar cheese, and blue cheese crumbles until evenly distributed.
  7. Spread the mixture into an 8×8-inch (20×20 cm) baking dish, smoothing the top.
  8. Bake for 20-25 minutes until hot and bubbly with melted, slightly golden cheese on top.
  9. Remove from oven and garnish with chopped green onions or parsley if desired. Serve warm with celery sticks, tortilla chips, or crusty bread.

Notes

Use softened cream cheese to avoid lumps. Rotisserie chicken saves time and adds flavor. Avoid overbaking to keep dip moist. If too spicy, serve with extra sour cream. For a dairy-free version, use dairy-free cream cheese and sour cream alternatives and omit or substitute blue cheese.
