Instructions

  1. Preheat oven to 325Β°F (163Β°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons sugar. Stir until evenly coated and press firmly into the bottom of the prepared pan.
  3. Bake crust for 10 minutes to set. Let cool slightly.
  4. In a large bowl, beat softened cream cheese with ΒΎ cup sugar until smooth and creamy.
  5. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  6. Gently fold in blueberries.
  7. Warm strawberry jam with water until pourable but not hot. Let cool slightly.
  8. Pour cheesecake batter over cooled crust and smooth the top.
  9. Drop spoonfuls of strawberry jam mixture evenly over the batter. Use a toothpick or skewer to swirl the jam gently into the batter to create a marbled effect.
  10. Bake for 40-45 minutes until the center is slightly jiggly but not liquid.
  11. Cool on a wire rack for 30 minutes, then refrigerate for at least 3 hours or overnight.
  12. Use parchment overhang to lift bars from pan and cut into 12 squares.
