  • 1/4 cup diced green chiles, drained
  • 2 tablespoons chopped fresh chives (optional)
  • 4 large flour tortillas (burrito size, about 10 inches)

Instructions

  1. Prepare the Cream Cheese Base: Place the softened cream cheese in a large mixing bowl. Beat with an electric mixer on medium speed for about 2 minutes until completely smooth and fluffy. Scrape down the sides of the bowl. Add the sour cream and mayonnaise, then beat for another minute until well combined.
  2. Add the Seasonings and Mix-Ins: Sprinkle the ranch seasoning mix over the cream cheese mixture. Beat on low speed until fully incorporated (about 30 seconds). Fold in the shredded cheddar cheese, crumbled bacon, and diced green chiles using a rubber spatula until evenly distributed.
  3. Assemble the Tortilla Rolls: Lay one flour tortilla flat on a clean work surface. Spoon about 1/4 of the filling onto the tortilla and spread evenly across the entire surface, leaving a 1-inch border around the edges. Starting from one edge, roll the tortilla tightly into a log. Repeat with remaining tortillas and filling.
  4. Wrap and Chill: Wrap each rolled tortilla tightly in plastic wrap, twisting the ends like a candy wrapper. Place on a baking sheet or large plate and refrigerate for at least 2 hours (overnight is better).
  5. Slice and Serve: Unwrap the chilled tortilla rolls and place on a cutting board. Using a sharp serrated knife, slice each roll into 1-inch thick rounds using a gentle sawing motion. Arrange on a serving platter cut-side up. Sprinkle with fresh chives if desired. Serve immediately or keep refrigerated.
