These soft gingerbread cookies are perfectly spiced and pillowy, topped with a rich molasses glaze. They’re the ultimate cozy treat, ready in under 30 minutes with no chill time required.

Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1/4 cup unsulphured molasses
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup powdered sugar, sifted
  • 2 tablespoons unsulphured molasses
  • 2–3 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat softened butter and packed brown sugar together until light and fluffy, about 2-3 minutes with an electric mixer on medium speed.
  3. Add room-temperature egg and 1/4 cup molasses. Beat on low speed until just combined. Scrape down sides of bowl.
  4. In a separate medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  5. Gradually add dry ingredients to wet mixture. Mix on low speed until just combined. Use a spatula to fold dough together until no streaks remain. Dough will be soft and slightly sticky.
  6. Using a 1.5-tablespoon cookie scoop, portion dough onto prepared baking sheets, spacing 2 inches apart.
  7. Bake for 8-10 minutes. Cookies should look puffed and set around edges with centers still slightly soft.
  8. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.
  9. For the glaze: In a small bowl, whisk together powdered sugar, 2 tablespoons molasses, and 2 tablespoons milk until smooth. Add more milk if too thick, more powdered sugar if too thin.
  10. Once cookies are completely cool, drizzle glaze over tops. Let set for 15-20 minutes before serving.

Notes

Don’t overbake—cookies will look underdone in center when removed. Use room temperature ingredients for best results. Store in airtight container with a slice of bread to keep soft for up to 5 days. Freeze unglazed for up to 3 months.
