  • ¼ cup cold unsalted butter (56g or 4 tablespoons), cut into small cubes
  • 2 tablespoons chopped pecans or walnuts (optional)
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the center. Place your ramekins or baking dish on a small baking sheet.
  2. Wash, core, and chop your apples into ½-inch chunks. Leave the peel on or peel if preferred. You should have about 2½ to 3 cups of chopped apples. Place them in a medium bowl.
  3. Add the lemon juice, granulated sugar, flour, cinnamon, nutmeg, and salt to the apples. Toss everything together with a spatula until evenly coated. Let sit for about 5 minutes while you make the topping.
  4. In a small bowl, combine the oats, flour, brown sugar, and cinnamon. Add the cold butter cubes and use a pastry cutter or fork to cut the butter into the dry ingredients until the mixture looks like coarse sand with some pea-sized butter pieces. If using nuts, stir them in now. Do not overmix.
  5. Divide the apple mixture evenly between two 10-ounce ramekins (or pour into one small dish). Spoon the topping over the apples, pressing down gently to cover them completely.
  6. Place the baking sheet with the ramekins in the oven and bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly around the edges. If the topping browns too quickly after 25 minutes, tent loosely with foil.
  7. Let the crisps rest on a wire rack for 5-10 minutes to allow the filling to set.
  8. Serve warm, topped with vanilla ice cream, whipped cream, or a drizzle of heavy cream.
