Cozy Slow Cooker Three-Bean Pumpkin Chili

A hearty, smoky, and slightly sweet chili made with pumpkin puree and three types of beans. This easy slow cooker recipe is perfect for cozy evenings and is a crowd-pleaser that even skeptics will love.

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 1 can (14.5 ounces) fire-roasted diced tomatoes, undrained
  • 1 can (15 ounces) 100% pure pumpkin puree
  • 2 cups low-sodium vegetable broth
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) chickpeas (garbanzo beans), drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional toppings: sour cream or Greek yogurt, shredded cheddar cheese, sliced jalapeños, fresh cilantro, diced avocado, lime wedges, crushed tortilla chips

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 4-5 minutes, stirring occasionally, until translucent and starting to soften.
  2. Add the minced garlic and diced bell pepper, and cook for another 2-3 minutes until the garlic is fragrant and the bell pepper has softened slightly.
  3. Add the chili powder, cumin, smoked paprika, oregano, salt, and black pepper to the skillet. Stir constantly for about 1 minute to bloom the spices.
  4. Scrape the sautéed onion mixture into the bottom of a 6-quart or larger slow cooker.
  5. Add the fire-roasted diced tomatoes (undrained), pumpkin puree, and vegetable broth to the slow cooker. Stir until the pumpkin puree is fully incorporated.
  6. Add the drained and rinsed black beans, kidney beans, and chickpeas. Stir gently to distribute evenly.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  8. About 30 minutes before serving, taste and adjust seasoning as needed.
  9. Ladle into bowls and serve with desired toppings.

Notes

Do not skip sautéing the aromatics and blooming the spices for best flavor. Use 100% pure pumpkin puree, not pumpkin pie filling. For a thicker chili, remove the lid during the last 30 minutes of cooking. Chili tastes even better the next day.
