  • 1/3 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon flaky sea salt, plus more for topping
  • 1 teaspoon vanilla extract
  • Apple slices, for serving (Granny Smith recommended)

Instructions

  1. Unwrap the caramels. This is the most time-consuming step; you need about 40 individual caramels.
  2. Place the unwrapped caramels in a microwave-safe bowl. Pour the heavy cream over the top without stirring.
  3. Microwave on high for 30 seconds. Remove and stir gently. Repeat in 30-second bursts, stirring between each, until the caramels are completely melted and smooth (about 2 to 3 minutes total).
  4. Add the unsalted butter and vanilla extract. Stir until the butter is fully incorporated and the mixture is glossy.
  5. Add 1/2 teaspoon of flaky sea salt and stir well. Taste and adjust salt to preference.
  6. Pour the warm caramel dip into a serving bowl. Sprinkle extra flaky sea salt on top.
  7. Slice the apples into wedges or rounds, removing the core and seeds. If not serving immediately, toss slices in cold water with lemon juice to prevent browning.
  8. Serve immediately while warm. Arrange apple slices around the dip.

Notes

For best results, use room temperature cream to prevent the caramel from seizing. If the dip thickens as it cools, microwave in 10-15 second bursts and stir. This dip can be made up to 3 days ahead and reheated. For a dairy-free version, substitute full-fat coconut cream and vegan butter. Add cinnamon, bourbon, or chocolate drizzle for variations.
