A rich, creamy chicken soup with sun-dried tomatoes that started as a happy accident. Tender chicken, tangy sun-dried tomatoes, and a silky cream broth come together in about 40 minutes for the ultimate comfort food.

Ingredients

Scale
  • 1.5 lbs (680g) chicken breasts or thighs, diced into bite-sized pieces
  • 1/2 cup (80g) sun-dried tomatoes in oil, drained (reserve 2 tablespoons oil)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4–5 garlic cloves, minced
  • 4 cups (960ml) chicken broth (low-sodium recommended)
  • 1 cup (240ml) heavy cream
  • 1/2 cup (50g) freshly grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 3 cups (90g) fresh spinach, roughly chopped
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Prep your ingredients first: dice chicken into 1-inch cubes, chop onion, mince garlic, drain and chop sun-dried tomatoes (reserve oil), grate Parmesan.
  2. Heat 2 tablespoons reserved sun-dried tomato oil in a Dutch oven over medium-high heat until shimmering.
  3. Add diced chicken in a single layer (work in batches if needed). Cook undisturbed 3-4 minutes until golden brown, then stir and cook 2-3 minutes more until cooked through. Remove chicken to a plate.
  4. In the same pot, add diced onion. Cook over medium heat 4-5 minutes, stirring occasionally, until soft and translucent. Scrape up browned bits from bottom.
  5. Add minced garlic and cook 30 seconds until fragrant.
  6. Stir in sun-dried tomatoes, oregano, thyme, and red pepper flakes (if using). Cook 1 minute.
  7. Pour in chicken broth and bring to a gentle boil, scraping up any browned bits from the bottom.
  8. Reduce heat to low and simmer 10 minutes to meld flavors.
  9. Return cooked chicken to pot. Stir in heavy cream and freshly grated Parmesan until cheese is melted and broth is smooth. Do not let boil.
  10. Add chopped spinach and stir until wilted, about 1-2 minutes.
  11. Taste and adjust seasoning with salt and black pepper.
  12. Serve immediately in warm bowls, garnished with fresh basil or parsley and extra Parmesan if desired.

Notes

Don’t skip browning the chicken—it adds deep flavor. Keep heat low after adding cream to prevent curdling. Grate your own Parmesan for smooth melting. Let soup rest 5 minutes before serving. Season in layers, being mindful of salt from sun-dried tomatoes and Parmesan. For dairy-free, use full-fat coconut milk and skip Parmesan. For vegetarian, use cannellini beans and vegetable broth.
