  • 68 bone-in, skin-on chicken thighs (about 2 lbs or 900g)
  • 1/4 cup (60ml) pure maple syrup
  • 3 tablespoons (45ml) Dijon mustard
  • 4 cloves garlic, minced
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon (5g) kosher salt
  • 1/2 teaspoon (2g) black pepper, freshly ground
  • 45 sprigs fresh thyme (optional, or 1 teaspoon dried thyme)

Instructions

  1. Preheat your oven to 425°F (220°C). Let the chicken thighs sit at room temperature for about 10 minutes.
  2. Pat the chicken thighs dry with paper towels to ensure crispy skin.
  3. In a medium mixing bowl, whisk together the maple syrup, Dijon mustard, minced garlic, olive oil, salt, and pepper. Taste and adjust if needed.
  4. Place the chicken thighs in the bowl with the sauce and toss until every piece is completely coated.
  5. Arrange the chicken thighs skin-side up in a 9×13-inch baking dish or rimmed sheet pan. Pour any remaining sauce over the top. Tuck fresh thyme sprigs between the thighs if using.
  6. Roast for 25-30 minutes. After 15 minutes, baste the chicken with the pan juices. The chicken is done when the skin is deeply golden and caramelized, and the internal temperature reaches 175°F (80°C).
  7. Remove from the oven and let rest in the pan for 5 minutes before serving.

Notes

For extra crispy skin, pat the chicken thoroughly dry and avoid overcrowding the pan. If the sauce starts to darken too much during roasting, tent the dish loosely with foil. To make extra sauce for drizzling, double the sauce ingredients and reserve half before adding the chicken; simmer the reserved sauce on the stovetop for 3-4 minutes until thickened.
