A simple, comforting crockpot soup made with just five ingredients that tastes like it simmered all day. Perfect for cold nights and busy weeknights, this recipe recreates a beloved café soup with minimal effort.

Ingredients

Scale
  • 1.5 pounds (680 grams) boneless, skinless chicken thighs
  • 4 cups (950 ml) low-sodium chicken broth
  • 2 large yellow onions, diced
  • 4 medium carrots, peeled and sliced into 1/4-inch rounds
  • 2 teaspoons (2 grams) dried thyme

Instructions

  1. Prep the Vegetables: Dice the onions into small, even pieces (about 1/4-inch). Peel and slice the carrots into 1/4-inch thick rounds.
  2. Layer in the Crockpot: Place the diced onions and sliced carrots in the bottom of a 5 to 6 quart slow cooker, spreading them in an even layer.
  3. Add the Chicken: Nestle the chicken thighs on top of the vegetables.
  4. Season and Pour: Sprinkle the dried thyme evenly over the chicken and vegetables. Pour the chicken broth around the edges, being careful not to wash the thyme off the chicken.
  5. Cook Low and Slow: Cover and cook on low for 6 to 7 hours, or until the chicken is fork-tender and easily shreds. Alternatively, cook on high for 3 to 4 hours.
  6. Shred the Chicken: Remove the chicken thighs to a cutting board and shred with two forks. Discard any large pieces of fat or gristle.
  7. Combine and Serve: Return the shredded chicken to the crockpot and stir. Taste and add salt and pepper if needed. Ladle into bowls and serve hot.

Notes

Do not lift the lid during cooking. For extra flavor, sauté the onions in oil until golden before adding to the crockpot. The soup tastes even better the next day. To thicken, mash some cooked vegetables or add a cornstarch slurry.
