These crispy, caramelized Brussels sprouts are tossed in a tangy-sweet balsamic glaze and roasted to perfection. An easy, crowd-pleasing side dish that converts even skeptics.

Ingredients

Scale
  • 1 ½ pounds (about 680 grams) Brussels sprouts
  • 3 tablespoons olive oil
  • ¼ cup (60 ml) balsamic vinegar
  • 2 tablespoons honey or maple syrup
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt (or ¾ teaspoon table salt)
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup (25 grams) freshly grated Parmesan cheese (optional)
  • Fresh lemon juice (from ½ lemon)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Rinse the Brussels sprouts under cold water and pat them completely dry. Trim off the tough stem ends (about ¼ inch) and remove any yellow or wilted outer leaves. Cut each sprout in half lengthwise through the stem; quarter any large ones so they are roughly the same size.
  3. In a small saucepan over medium heat, combine the balsamic vinegar and honey (or maple syrup). Bring to a gentle simmer, then reduce heat to low. Cook for 8-10 minutes, stirring occasionally, until thickened and syrupy (reduced by about half). Remove from heat and stir in the minced garlic. Set aside to cool slightly.
  4. In a large mixing bowl, combine the halved Brussels sprouts with olive oil, salt, and black pepper. Toss well until every sprout is coated.
  5. Spread the seasoned sprouts in a single layer on the prepared baking sheet, cut side down. Roast for 15 minutes without disturbing.
  6. Remove the pan from the oven. Drizzle about half of the balsamic glaze over the sprouts and toss gently to coat. Spread them back into a single layer, cut side down again. Return to the oven and roast for another 10-12 minutes, until tender and deeply golden with crispy edges.
  7. Remove from the oven. Drizzle the remaining balsamic glaze over the hot sprouts and toss gently. If using, sprinkle the grated Parmesan cheese on top while still hot. Squeeze fresh lemon juice over everything and sprinkle red pepper flakes if desired. Serve immediately.

Notes

For extra crispy sprouts, ensure they are completely dry before roasting and do not overcrowd the pan. The balsamic glaze can be made ahead and reheated gently. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days; reheat in a 375°F oven for 5-7 minutes or in an air fryer at 350°F for 3-4 minutes.
