Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 2 cups white chocolate chips
  • 1 can (14 ounces) sweetened condensed milk
  • 2 tablespoons unsalted butter
  • 1 cup dried cranberries
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2–3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides. Lightly grease the parchment.
  2. In a large mixing bowl, cream together 1 cup softened butter and ½ cup granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add 2 cups flour and ¼ teaspoon salt. Mix on low until dough just comes together. Do not overmix.
  4. Press dough evenly into the prepared pan. Prick all over with a fork. Bake for 18-20 minutes until edges are just golden. Let cool in pan on a wire rack for 10 minutes.
  5. In a small saucepan over low heat, combine 2 cups white chocolate chips, 1 can sweetened condensed milk, and 2 tablespoons butter. Stir constantly until melted and smooth.
  6. Remove from heat. Stir in 1 teaspoon vanilla extract and 1 cup dried cranberries.
  7. Pour white chocolate mixture over warm shortbread base and spread evenly. Bake for 15-18 minutes until topping is set and edges are golden. Center should be slightly jiggly.
  8. Cool bars in pan on a wire rack for at least 2 hours. For best results, refrigerate for 1 hour after cooling to room temperature.
  9. In a small bowl, whisk together 1 cup powdered sugar, ½ teaspoon vanilla extract, and 2-3 tablespoons milk until smooth and drizzling consistency.
  10. Once bars are completely cool and set, drizzle glaze over the top. Let glaze set for about 10 minutes.
  11. Use parchment overhang to lift bars out of pan. Cut into squares with a sharp knife, wiping clean between cuts.

Notes

Use good quality white chocolate chips for best results. Let bars cool completely before glazing to prevent glaze from melting. For cleaner cuts, refrigerate bars for an hour before slicing. Bars taste even better the next day.
