  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Place a baking sheet on the middle rack to preheat along with the oven.
  2. Prepare the apples: Peel, core, and slice apples into ¼-inch thick pieces. Place in a medium mixing bowl. Add granulated sugar, 1 tablespoon flour, 1 teaspoon cinnamon, lemon juice, and a pinch of salt. Toss until evenly coated. Set aside.
  3. Make the crisp topping: In a small bowl, combine rolled oats, ⅓ cup flour, brown sugar, ½ teaspoon cinnamon, and a pinch of salt. Whisk together with a fork. Add cold, cubed butter. Using a pastry cutter or fingertips, work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces remaining. Refrigerate while preparing ramekins.
  4. Assemble the crisps: Divide the apple mixture evenly between two 8-ounce ramekins. Pack down gently with the back of a spoon. Sprinkle topping evenly over each ramekin, pressing down lightly.
  5. Bake: Place ramekins on the preheated baking sheet. Bake for 28-32 minutes, until filling is bubbling around edges and topping is deep golden brown. If topping browns too quickly, tent loosely with aluminum foil.
