This easy, cheesy breakfast casserole with sausage, hash browns, and a creamy egg custard is the ultimate comfort food. Perfect for cozy mornings, holiday brunches, or even a rainy Tuesday dinner.

Ingredients

Scale
  • 1 lb (450g) Breakfast Sausage
  • 1 (30 oz / 850g) bag Frozen Shredded Hash Browns
  • 2 cups (200g) Shredded Cheddar Cheese
  • 1 cup (100g) Shredded Mozzarella Cheese
  • 8 large Eggs
  • 1 ½ cups (360ml) Whole Milk
  • ½ cup (120ml) Heavy Cream
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • Optional: ¼ teaspoon Red Pepper Flakes
  • Optional: 2 tablespoons Chopped Fresh Chives or Parsley

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or non-stick cooking spray.
  2. Brown the sausage in a large skillet over medium-high heat, breaking it into crumbles, for 5-7 minutes. Set aside to cool slightly.
  3. Spread the frozen hash browns evenly across the bottom of the greased baking dish. Press down gently.
  4. Sprinkle the cooked sausage over the hash browns, then sprinkle both cheeses over the sausage, reserving about ½ cup of cheese for the top.
  5. In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, salt, pepper, garlic powder, and onion powder until smooth and slightly frothy.
  6. Slowly pour the egg custard mixture evenly over the layers in the baking dish. Gently shake the dish to help it settle. Sprinkle the reserved ½ cup of cheese on top.
  7. Cover the dish tightly with aluminum foil and bake for 35 minutes.
  8. Remove the foil and bake for another 15-20 minutes, until the top is golden brown and bubbly, and a knife inserted into the center comes out clean.
  9. Let the casserole rest for at least 10 minutes before serving. Garnish with fresh chives or parsley if desired.

Notes

Use frozen hash browns straight from the bag for the best crispy texture. Do not thaw them. Let the casserole rest for 10 minutes after baking for cleaner slices. For make-ahead, assemble the night before, cover, and refrigerate; add 10-15 minutes to the covered baking time.
