  • 8 cups water (for baking soda bath)
  • ⅓ cup baking soda
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Coarse sea salt or pretzel salt, for sprinkling
  • 2 tablespoons unsalted butter (for dip)
  • 2 tablespoons all-purpose flour (for dip)
  • 1 cup whole milk
  • ½ cup beer (light lager or pilsner)
  • 2 cups sharp cheddar cheese, freshly shredded
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon garlic powder
  • Salt and black pepper, to taste

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let sit for about 5 minutes until foamy.
  2. Add melted butter, 1 ½ teaspoons salt, and 3 ½ cups flour to the yeast mixture. Stir until a shaggy dough forms. Add remaining flour if too wet.
  3. Turn dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  4. Cover dough with a clean kitchen towel and let rest for 10 minutes.
  5. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  6. In a large pot, bring 8 cups of water to a boil. Carefully stir in ⅓ cup baking soda. Reduce heat to a gentle simmer.
  7. Divide dough into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces (about 12-15 per rope).
  8. Drop 6-8 pretzel bites into the simmering baking soda water. Cook for 30 seconds, flip, and cook another 30 seconds. Remove with a slotted spoon and place on prepared baking sheet. Repeat with remaining bites.
  9. Brush each pretzel bite with egg wash and sprinkle generously with coarse sea salt.
  10. Bake for 12-15 minutes until deep golden brown and puffed, rotating the sheet halfway through.
  11. While pretzels bake, make the dip: In a small saucepan, melt 2 tablespoons butter over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute.
  12. Slowly whisk in milk and beer. Continue whisking until thickened, about 3-4 minutes.
  13. Reduce heat to low. Add shredded cheddar cheese a handful at a time, whisking until melted. Stir in Dijon mustard, garlic powder, salt, and pepper. Adjust seasoning.
  14. Serve pretzel bites immediately with warm beer cheese dip.
