A warm, spiced hug in a mug that starts with a simple trick: infusing the coffee itself with gingerbread flavor. This cozy drink comes together faster than a trip to the café and is perfect for cold mornings.

Ingredients

Scale
  • 2 tablespoons ground coffee (medium roast)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 cup water (filtered)
  • 2 tablespoons instant coffee granules
  • 2 tablespoons granulated sugar
  • 2 tablespoons hot water
  • 1/4 teaspoon molasses (optional)
  • 1 cup milk (dairy or non-dairy)
  • Whipped cream (optional, for garnish)
  • Cinnamon stick (for garnish)

Instructions

  1. In a small bowl, combine the ground coffee, cinnamon, ginger, nutmeg, and cloves. Stir well to distribute the spices evenly.
  2. Place the spiced coffee grounds in your coffee maker or French press. Add the water and brew according to your machine’s instructions. If using a French press, let it steep for 4 minutes before pressing.
  3. In a separate bowl or jar, combine the instant coffee granules, sugar, and hot water. If using, add the molasses. Whisk vigorously (or use an electric mixer) until the mixture becomes thick, glossy, and forms stiff peaks (about 3-5 minutes by hand, 2 minutes with a mixer).
  4. In a small saucepan or microwave, warm the milk until it’s steaming but not boiling.
  5. Pour the brewed gingerbread coffee into your mug, filling it about two-thirds full. Slowly pour the warm milk over the back of a spoon to create a layered effect.
  6. Spoon the whipped coffee mixture on top of the milk. Garnish with a cinnamon stick or a light dusting of cinnamon. Optionally, add a dollop of whipped cream.

Notes

Don’t overdo the cloves—they are strong. Fresh spices matter; replace ground spices every 6 months. For the whipped topping, use just-boiled water and fresh instant coffee. The whipped coffee topping can be stored in an airtight container in the fridge for up to 3 days; let it come to room temperature before using and whisk briefly to revive.
