  • 3 tablespoons (38g) granulated sugar
  • 3 tablespoons (38g) light brown sugar, packed
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup (60g) all-purpose flour, spooned and leveled
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup (60g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Melt the butter in a microwave-safe bowl in 20-second bursts until just melted. Let it cool for a minute.
  3. Add granulated sugar and packed light brown sugar to the melted butter. Whisk vigorously for about 30 seconds until smooth and slightly thickened.
  4. Add the egg yolk and vanilla extract. Whisk until fully combined and creamy.
  5. In a separate small bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Add the flour mixture to the butter mixture. Fold gently with a rubber spatula or wooden spoon until just combined. A few streaks of flour are okay.
  7. Fold in the chocolate chips until evenly distributed. The dough will be soft and slightly sticky.
  8. Scoop the dough into 6 equal balls, about 1.5 tablespoons each. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake immediately for 9-11 minutes, until the edges are golden brown and the centers look slightly underdone and puffy.
  10. Let the cookies rest on the hot baking sheet for 5 minutes, then transfer to a cooling rack or plate.

Notes

For best results, use room temperature egg yolk. Don’t overmix the dough. Bake from the center rack. Watch the bake time closely. Let cookies cool on the baking sheet for 5 minutes before moving. For a gluten-free option, use a 1:1 gluten-free baking flour blend. For a vegan version, use vegan butter and replace the egg yolk with 1 tablespoon aquafaba mixed with 1/2 teaspoon cornstarch.
