  • 2 medium delicata squash (about 1 to 1.5 pounds total)
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons pure maple syrup
  • 1/2 teaspoon salt (fine sea salt or kosher salt)
  • 1/4 teaspoon black pepper, freshly ground
  • Optional pinch of cinnamon or cayenne
  • Fresh thyme or parsley, chopped (for garnish)
  • Flaky sea salt (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  2. Rinse the delicata squash under cool water and pat dry. Using a sharp knife, trim off both ends (about 1/4 inch from each tip). Slice the squash crosswise into rings about 1/2-inch thick. Use a spoon to scoop out the seeds and stringy pulp from each ring.
  3. In a medium mixing bowl, whisk together the melted butter, maple syrup, salt, and pepper. If using cinnamon or cayenne, add it now.
  4. Add the squash rings to the bowl with the glaze. Use your hands or a spatula to toss gently until every ring is evenly coated.
  5. Place the rings in a single layer on the prepared baking sheet, making sure they are not overlapping.
  6. Roast for 15 minutes. Remove the pan from the oven and flip each ring over with a spatula.
  7. Return the pan to the oven and roast for another 10 to 15 minutes, until the rings are tender and the edges are golden brown and caramelized. Total roasting time is usually 25 to 30 minutes.
  8. Remove from the oven and let the rings cool on the pan for 2 minutes. Transfer to a serving platter, sprinkle with fresh thyme or flaky sea salt if desired, and serve warm.

Notes

For extra caramelization, brush a bit more maple syrup on the rings after flipping. If rings are browning too fast but aren’t tender yet, cover loosely with foil for the last 5 minutes. Let rings rest for a minute after roasting to allow the glaze to set slightly.
