Ingredients

Scale
  • 1 ¾ cups (210g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons pumpkin pie spice
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 1 cup (245g) pumpkin puree (100% pure pumpkin)
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) milk (any kind)
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, baking powder, salt, and pumpkin pie spice until evenly combined.
  3. In a large bowl, whisk together the wet ingredients: granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, vanilla extract, and milk until smooth and glossy.
  4. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold together gently until just combined (a few lumps are fine). Do not overmix.
  5. Fold in 1 cup of semi-sweet chocolate chips, reserving about 2 tablespoons for the tops.
  6. Divide the batter evenly among the 12 muffin cups, filling each almost to the top. Sprinkle the reserved chocolate chips on top.
  7. Bake for 18-22 minutes, until a toothpick inserted into the center comes out with a few moist crumbs. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For the fluffiest muffins, ensure eggs and milk are at room temperature. Do not overmix the batter to avoid tough muffins. Check baking soda freshness by testing with vinegar. Let muffins cool for at least 10 minutes before serving for best texture. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
