This Instant Pot lasagna soup delivers all the rich, cheesy comfort of traditional lasagna without the layering or baking. With Italian sausage, broken lasagna noodles, and a creamy ricotta topping, it’s a quick and satisfying weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound mild or hot Italian sausage, casings removed
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 4 cups low-sodium chicken broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14.5 ounces) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • 8 ounces dried lasagna noodles, broken into 12 inch pieces
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Brown the sausage: Turn Instant Pot to ‘Sauté’ on High. Add olive oil and heat for 30 seconds. Add Italian sausage and break it up with a wooden spoon. Cook until browned, about 4-5 minutes.
  2. Add aromatics: Add diced onion and cook for 2 minutes until softened. Add minced garlic, oregano, basil, and red pepper flakes. Stir for 30 seconds until fragrant.
  3. Deglaze the pot: Pour in ½ cup chicken broth and scrape the bottom of the pot to release browned bits.
  4. Add remaining liquids and tomatoes: Add remaining chicken broth, crushed tomatoes, diced tomatoes with juices, tomato paste, and sugar. Stir until tomato paste is dissolved.
  5. Pressure cook: Secure lid, set valve to ‘Sealing’. Press ‘Manual’ or ‘Pressure Cook’ for 5 minutes on high pressure.
  6. Make cheesy topping: In a small bowl, combine ricotta, mozzarella, and Parmesan. Stir until mixed. Set aside.
  7. Quick release and add noodles: When cooking time is up, quick release pressure. Remove lid, turn to ‘Sauté’ mode. Add broken lasagna noodles and cook for 8-10 minutes, stirring occasionally, until al dente.
  8. Adjust seasoning and serve: Taste and add salt and pepper as needed. Ladle into bowls, top with ricotta mixture, sprinkle with parsley, and serve immediately.

Notes

Don’t skip browning the sausage for best flavor. Break lasagna noodles unevenly for varied texture. Start checking noodles at 8 minutes to avoid mushiness. Let soup rest 5 minutes before serving for best flavor melding.
