Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 3/4 cup pumpkin puree (not pumpkin pie filling)
  • 2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until combined. Then add the pumpkin puree and mix until smooth.
  4. In a separate medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  5. Gradually add the dry ingredients to the wet mixture. Mix on low speed until just combined. Do not overmix.
  6. Fold in the chocolate chips using a rubber spatula until evenly distributed.
  7. Using a cookie scoop or two spoons, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Sprinkle a pinch of flaky sea salt over each dough ball.
  9. Bake immediately for 10-12 minutes, or until the edges are set and lightly golden. The centers will look slightly underdone.
  10. Let the cookies rest on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Do not overmix the dough. Use room temperature ingredients. Measure flour using the spoon-and-level method. Watch the bake time as ovens vary. Let cookies cool on the baking sheet for 5 minutes before transferring. Flaky sea salt is essential for the best flavor.
