This creamy, spicy, and tangy buffalo chicken dip comes together in under 20 minutes using simple ingredients. Perfect for game days, potlucks, and holiday parties, it’s the crowd-pleasing appetizer that disappears first.

Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup buffalo wing sauce (preferably Frank’s RedHot Original)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1/2 cup shredded cheddar cheese, plus more for topping
  • 2 cups cooked shredded chicken (rotisserie or canned)
  • 1/4 cup crumbled blue cheese (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • Celery sticks, carrot sticks, tortilla chips, or crackers for serving

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the refrigerator about 30 minutes before you start, or microwave it on low power for 15-20 seconds until it is soft but not melted.
  2. Shred the chicken: If using rotisserie chicken, remove the skin and bones, then shred the meat with two forks or your hands. If using canned chicken, drain it well and flake it with a fork.
  3. Heat the skillet: Place your medium skillet or saucepan over medium-low heat. Add the softened cream cheese and let it melt slowly, stirring occasionally with a silicone spatula, about 2-3 minutes.
  4. Add the buffalo sauce and ranch: Once the cream cheese is smooth and creamy, pour in the buffalo wing sauce and ranch dressing. Stir until everything is well combined and the mixture is a uniform orange color, bubbling gently around the edges.
  5. Mix in the seasonings: Add the garlic powder and onion powder, plus a pinch of salt and pepper. Stir for another minute until the spices are fully incorporated.
  6. Fold in the chicken and cheeses: Add the shredded chicken, shredded cheddar cheese, and crumbled blue cheese (if using). Stir gently until the chicken is evenly coated and the cheese starts to melt into the sauce. The mixture should look thick and creamy.
  7. Transfer to baking dish: Pour the dip into your small baking dish or oven-safe skillet. Spread it into an even layer. Sprinkle a little extra shredded cheddar on top.
  8. Broil for 2-3 minutes: Place the dish under the broiler for 2-3 minutes, watching it closely, until the top is bubbly and slightly browned. If you don’t have a broiler, bake at 375°F for 10 minutes until hot and bubbly.
  9. Let it rest: Remove from the oven and let the dip sit for 2-3 minutes before serving. This helps it set slightly so it doesn’t slide off your chips.

Notes

For best results, use full-fat cream cheese. Let cream cheese soften at room temperature for at least 30 minutes to avoid lumps. Taste as you go since buffalo sauces vary in heat. Keep dip warm in a small slow cooker for parties. Double the recipe for a crowd using a 9×13 inch baking dish.
