A simple, satisfying, and budget-friendly brunch featuring creamy scrambled eggs, toasted bagels, and fresh fruit, perfect for Mother’s Day or casual gatherings.

Ingredients

Scale
  • 6 large eggs, room temperature
  • 2 tablespoons unsalted butter
  • 1/4 cup whole milk or cream (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh chives or parsley, chopped (optional garnish)
  • 4 plain or everything bagels
  • 4 tablespoons cream cheese or butter (softened)
  • 2 cups mixed fresh fruit (strawberries hulled and sliced, blueberries, kiwi peeled and sliced)
  • 1 teaspoon honey or maple syrup (optional drizzle)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prep the Fruit (10 minutes): Rinse and dry your fruit. Hull and slice strawberries, peel and slice kiwi, and measure out blueberries. Toss them gently in a bowl with a drizzle of honey or maple syrup if desired. Set aside.
  2. Toast the Bagels (5-7 minutes): Slice the bagels in half. Toast them in a toaster or under the oven broiler until golden and crisp on the edges (about 2-3 minutes per side). Spread softened cream cheese or butter while warm.
  3. Beat the Eggs (2 minutes): Crack the eggs into a mixing bowl. Add milk or cream if using. Whisk briskly until smooth and slightly frothy, about 30 seconds. Season with salt and pepper.
  4. Cook the Eggs (5-7 minutes): Heat butter in a nonstick skillet over medium-low heat until melted and bubbly. Pour in the eggs. Let sit undisturbed for 20 seconds, then gently stir with a spatula, scraping the bottom and folding eggs slowly. Remove from heat when mostly set but still glossy.
  5. Assemble and Garnish (2 minutes): Plate toasted bagels with eggs piled on top or on the side. Spoon fresh fruit alongside or in a small bowl. Sprinkle chopped chives or parsley over eggs and mint leaves over fruit.

Notes

Use low heat and gentle stirring for creamy scrambled eggs. Toast bagels just before serving for best texture. Substitute gluten-free bagels or vegan ingredients as needed. Fresh eggs and room temperature eggs improve texture. Leftover eggs can be reheated gently with a splash of milk.
