  • 3 to 4 pounds corned beef brisket
  • 4 medium yellow potatoes, peeled and halved
  • 4 large carrots, peeled and cut into chunks
  • 1 medium head green cabbage, cut into wedges
  • 1 large onion, quartered
  • 4 garlic cloves, smashed
  • 4 cups beef broth (homemade or low-sodium)
  • 2 bay leaves
  • 1 tablespoon whole black peppercorns
  • 2 tablespoons Dijon mustard
  • 1 teaspoon brown sugar
  • Salt and black pepper to taste

Instructions

  1. Rinse the corned beef under cold water to remove excess brine. Pat dry with paper towels. (10 minutes)
  2. Place the quartered onion and smashed garlic cloves at the bottom of your pot. (2 minutes)
  3. Set the brisket fat side up on top of the onions and garlic. (1 minute)
  4. Add 4 cups beef broth, bay leaves, and peppercorns. The liquid should cover about three-quarters of the meat. Stir in Dijon mustard and brown sugar gently. (3 minutes)
  5. Bring to a boil over medium-high heat, then reduce to a low simmer. Cover with lid slightly ajar and cook for 2 to 2.5 hours until meat is fork-tender. (2-2.5 hours)
  6. Nestle the potatoes and carrots around the brisket. Cover and simmer for 30 minutes. (30 minutes)
  7. Place the cabbage wedges on top of everything. Cover and cook for another 15-20 minutes until cabbage is tender but not mushy. (15-20 minutes)
  8. Taste the broth and adjust salt and pepper as needed. Remove bay leaves and peppercorns before serving. (5 minutes)
  9. Transfer the brisket to a cutting board and let rest 5-10 minutes before slicing thinly against the grain. (5-10 minutes)

Notes

If the broth reduces too much during cooking, add a splash of water or broth to keep everything moist. Add cabbage last to avoid mushy texture. Let the meat rest before slicing to keep it juicy. For gluten-free, verify broth and mustard labels. This recipe is naturally dairy-free.
