A refreshing and vibrant summer salad combining juicy watermelon, tangy feta, peppery arugula, fresh mint, and a sweet balsamic glaze. Perfect for quick gatherings or light meals.

  • 4 cups seedless watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 4 cups arugula, washed and dried
  • 23 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil (optional)
  • Pinch of sea salt
  • Freshly ground black pepper to taste

Instructions

  1. Cut about 4 cups of seedless watermelon into 1-inch bite-sized cubes.
  2. Rinse and dry fresh mint leaves thoroughly, then roughly chop about 1/4 cup.
  3. Wash and dry the arugula using a salad spinner or paper towels to keep leaves crisp.
  4. In a large mixing bowl, gently toss the watermelon cubes, crumbled feta, chopped mint, and arugula using salad tongs or spoons to avoid breaking the watermelon.
  5. Drizzle 1 tablespoon of extra virgin olive oil (optional), sprinkle a pinch of sea salt, and add freshly ground black pepper to taste. Toss lightly to combine.
  6. Just before serving, drizzle 2-3 tablespoons of balsamic glaze evenly over the salad.
  7. Give the salad a gentle toss if needed, taste, and adjust seasoning. Serve immediately.

Notes

To avoid sogginess, dry arugula thoroughly and add balsamic glaze just before serving. For prep ahead, keep ingredients separate and combine at serving time. Use creamy feta for best texture. Optional olive oil adds a silky finish.
