  • 6 cups watermelon, cubed (seedless preferred)
  • 2 large English cucumbers, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 1 tablespoon honey or agave nectar (optional)
  • Pinch of sea salt
  • Freshly cracked black pepper, to taste

Instructions

  1. Cut off the rind and chop the watermelon into roughly 1-inch cubes.
  2. Thinly slice the cucumbers into rounds about 1/4 inch thick; peel partially or completely if desired.
  3. Rinse and pat dry fresh mint leaves, then chop finely.
  4. In a small bowl, combine lime juice, honey or agave nectar, sea salt, and freshly cracked black pepper; whisk until honey dissolves.
  5. In a large mixing bowl, gently combine watermelon cubes, cucumber slices, and chopped mint.
  6. Pour the lime dressing over the salad and toss lightly to coat without breaking the fruit.
  7. Chill the salad in the refrigerator for at least 15 minutes before serving.

Use fresh lime juice for best flavor. Handle watermelon and cucumber gently to avoid bruising and watery salad. Chill salad for at least 15 minutes before serving to allow flavors to meld.
