Instructions

  1. In a large bowl, sift together flour, baking powder, baking soda, sugar, salt, and buttermilk powder (if using). Whisk to combine evenly.
  2. Separate the eggs, placing yolks in a medium bowl and whites in a clean, dry bowl.
  3. To the egg yolks, add milk, melted butter, and vanilla extract. Whisk gently until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined; batter should be slightly lumpy.
  5. Using an electric mixer or whisk, beat the egg whites until soft peaks form (about 3–5 minutes).
  6. Gently fold the whipped egg whites into the batter in three additions, keeping as much air as possible.
  7. Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
  8. Pour about ¼ cup (60ml) of batter per pancake onto the skillet. Cook 2–3 minutes until bubbles form and edges look set.
  9. Flip gently and cook another 1–2 minutes until golden brown and cooked through.
  10. Serve immediately with syrup, fresh fruit, or whipped cream. Makes about 8 pancakes.
