  • 1 teaspoon vanilla extract (optional)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped nuts like pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the chopped rhubarb with 1 cup of granulated sugar. Stir to coat evenly and set aside for 5 minutes.
  3. Pour the sugared rhubarb evenly into the bottom of a 9×13-inch baking dish, spreading it out to form a uniform layer.
  4. Evenly sprinkle the entire box of yellow cake mix over the rhubarb layer.
  5. Melt the unsalted butter in a small saucepan or microwave-safe bowl until fully liquid. Drizzle the melted butter evenly over the cake mix layer.
  6. If desired, sprinkle ground cinnamon and chopped nuts over the top.
  7. Bake in the preheated oven for 40 to 45 minutes until the top is golden brown and bubbling around the edges. A toothpick inserted in the center should come out mostly clean with a few moist crumbs.
  8. Let the cake rest for about 10 minutes before serving. Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.

Do not overmix rhubarb and sugar to maintain texture. Drizzle melted butter evenly for a golden crust. Check baking time closely to avoid burning; tent with foil if needed.
